| | What I Ate: Walnut burgersSeptember 30, 2010 - Justin McIntoshSWEET MOTHER OF TOFU. Last night I ate the most delicious homemade veggie burger I've ever had. It was possibly the only homemade veggie burger I've ever had. There might have been others. I don't remember anymore, not after last night. It's like the first time you hear the Beatles and then afterward every other band sounds like rubbish and you purposefully forget all that dreck so your ears only hear heaven. Or how you forget what life was like before your kids were born. How did I live then? How did I exist without them? I know my carnivore friends out there are most likely scoffing at the idea of eating a burger quote unquote made from walnuts. Fair enough. More for me then. Anyway, the recipe I used was one I slightly adapted from Brendan Brazier's "Thrive" book. His called for 1 cup of walnuts, 1/2 cup of hemp seeds, 2 tablespoons of apple cider vinegar, 2 tablespoons of coconut oil, 1/2 teaspoon of basil, 1/2 teaspoon of oregano and salt to taste. I didn't have hemp seeds, so I added some pumpkin and sunflower seeds. Oh, and garlic. Because garlic goes in just about every recipe I make. A quick whirl in the food processor and they were done. Brendan recommends eating them raw, but I don't think I put enough pumpkin and sunflower seeds in so mine were a little on the moist side. I sauteed them on a skillet with a little coconut oil and then served it on Ezekiel's sprouted bread with some veganaise and ketchup (I didn't have the ingredients necessary to make Brendan's ketchup).
